INGREDIENTS

1 sheet puff pastry, thawed
1 cup diced ripe peaches (peeled if desired)
2 tbsp granulated sugar
1 tbsp brown sugar
1 tsp cornstarch
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
1 pinch salt
2 tbsp all-purpose flour (for dusting)
1 egg (for egg wash)
1 tbsp milk (for egg wash)
1 tbsp coarse sugar (for topping)

INSTRUCTIONS

1. Prepare filling:
In a small bowl, combine peaches, granulated sugar, brown sugar, cornstarch, vanilla, cinnamon, and salt. Stir gently until evenly coated. Set aside for 5–10 minutes to release juices.

2. Preheat and prepare pastry:
Preheat oven to 400°F (200°C). Lightly flour a clean surface and roll puff pastry into a 12-inch square. Cut into 4 equal squares.

3. Fill turnovers:
Place 2–3 tablespoons of peach filling in the center of each square. Fold pastry diagonally to form a triangle, pressing edges together. Seal with the tines of a fork.

4. Brush and sprinkle:
In a small bowl, whisk egg with milk. Brush over turnovers. Sprinkle with coarse sugar for crunch.

5. Bake to golden perfection:
Transfer turnovers to a parchment-lined baking sheet. Bake 18–20 minutes, or until puffed and deeply golden.

6. Cool and serve:
Allow to cool for at least 10 minutes before serving. Enjoy warm or at room temperature.
