INGREDIENTS

4 cups fresh peaches, peeled and diced (about 5–6 medium peaches)
3 cups all-purpose flour
1 cup unsalted butter, melted and slightly cooled
1 cup granulated sugar
½ cup light brown sugar, packed
2 tsp pure vanilla extract
1 tsp baking powder
½ tsp ground cinnamon
¼ tsp salt
2 tbsp cornstarch
¼ cup granulated sugar (for peaches)
1 tbsp lemon juice

INSTRUCTIONS

1. Preheat and prepare: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a slight overhang for easy removal.

2. Make the crumb mixture: In a large bowl, whisk together melted butter, granulated sugar, brown sugar, and vanilla until smooth. In a separate bowl, whisk flour, baking powder, cinnamon, and salt. Gradually stir dry ingredients into the butter mixture until crumbly.

3. Form the base: Press about two-thirds of the crumb mixture evenly into the prepared pan to form a firm crust. Set the remaining crumbs aside for the topping.

4. Prepare the peach filling: In a medium bowl, combine diced peaches, cornstarch, sugar, and lemon juice. Toss gently until peaches are evenly coated and glossy.

5. Assemble the bars: Spread the peach filling evenly over the crust. Sprinkle the reserved crumb mixture evenly on top, covering most of the peaches but allowing some fruit to peek through.

6. Bake to perfection: Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbling.

7. Cool and slice: Let bars cool completely in the pan before lifting out with parchment overhang. Slice into squares or bars and serve.
