INGREDIENTS

1 lb red potatoes, halved or quartered
1 lb fresh green beans, trimmed
3 tbsp olive oil
3 tbsp unsalted butter, melted
3 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
½ tsp dried thyme
2 tbsp fresh parsley, chopped

INSTRUCTIONS

1. Prepare the vegetables:
Wash potatoes thoroughly and cut into halves or quarters for even cooking. Trim green beans and set aside.

2. Boil potatoes:
Place potatoes in a large pot, cover with water, and add 1 tsp salt. Bring to a boil and cook for 12–15 minutes until fork tender. Drain and set aside.

3. Blanch green beans:
In a separate pot, bring water to a boil. Add green beans and cook for 3 minutes until bright green and just tender. Drain and immediately rinse under cold water to stop cooking.

4. Make garlic butter oil:
In a small skillet over medium heat, combine olive oil, melted butter, and minced garlic. Cook for 1–2 minutes until fragrant, stirring frequently to avoid burning.

5. Toss and season:
In a large bowl, combine potatoes and green beans. Pour garlic butter oil over them. Add black pepper, smoked paprika, and dried thyme. Toss gently until everything is coated.

6. Roast for flavor:
Preheat oven to 400°F (200°C). Spread vegetables on a baking sheet and roast for 12 minutes, until edges are golden and slightly crisp.

7. Garnish and serve:
