Melty Gooey S’Mores Bars bring campfire nostalgia straight into your kitchen. With a buttery graham cracker crust, a silky layer of melted chocolate, and golden, gooey marshmallows on top, these bars are the perfect dessert for gatherings, parties, or cozy nights at home. Every bite captures the essence of a classic campfire treat—no flame required.

Unlike traditional s’mores that can be messy to assemble, these bars are baked in one pan, making them simple and fuss-free while still delivering that irresistible gooey texture. The sprinkle of flaky sea salt at the end balances sweetness and gives each bar a grown-up twist that dessert lovers adore.

Did you know the first recorded s’mores recipe appeared in a 1927 Girl Scouts guidebook? Since then, this treat has become a symbol of comfort food and togetherness. Now, with these Melty Gooey S’Mores Bars, you can share that same joy year-round.

Make a batch today, and watch them disappear fast!

Recipe Yield: 16 bars

INGREDIENTS

1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
2 cups semi-sweet chocolate chips
2 cups mini marshmallows
1 teaspoon vanilla extract
½ teaspoon flaky sea salt

INSTRUCTIONS

1. Prepare the crust:
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. In a bowl, mix graham cracker crumbs, melted butter, and sugar until evenly combined.

2. Bake the base:
Press mixture firmly into the bottom of the prepared pan. Bake for 8–10 minutes, until lightly golden. Remove from oven and let cool slightly.

3. Melt chocolate:
In a heatproof bowl, melt chocolate chips in the microwave in 30-second intervals, stirring until smooth. Stir in vanilla extract for extra flavor.

4. Build the layers:
Pour melted chocolate over the graham crust, spreading evenly. Sprinkle mini marshmallows across the top.

5. Toast the topping:
Place pan under the oven broiler for 1–2 minutes, just until marshmallows puff and turn golden brown. Watch closely to prevent burning.

6. Chill and slice:
Sprinkle flaky sea salt over warm marshmallows. Cool pan at room temperature for 15 minutes, then refrigerate for at least 1 hour. Slice into bars and serve.

Helpful Tips to Perfect This Recipe

  • Use high-quality chocolate: Rich, semi-sweet chocolate makes the bars indulgent and prevents them from tasting overly sweet.
  • Don’t skip the salt: A pinch of flaky sea salt balances the sweetness and enhances the campfire-inspired flavor.
  • Cut clean slices: Chill bars thoroughly before cutting, and use a sharp knife lightly coated with butter or cooking spray.
