Grilled Banana Split — caramelized bananas meet cold ice cream, rich sauces, and toasted pecans for the ultimate summer treat.

The Grilled Banana Split takes a nostalgic dessert and gives it a smoky, summer-ready twist. By grilling ripe bananas until their sugars caramelize, the fruit develops rich depth and a slightly smoky sweetness that pairs beautifully with cool, creamy ice cream. Layered with warm chocolate, silky caramel, and toasted pecans, this recipe delivers indulgence in every spoonful.

This creative version of the classic banana split draws inspiration from backyard barbecues, where grilling fruits adds unexpected elegance to dessert. The technique enhances natural flavors while adding a caramelized touch that feels both rustic and upscale. It’s perfect for cookouts, dinner parties, or when you want to impress guests with something playful yet sophisticated.

Every bite offers a harmony of warm and cold, crunchy and creamy, nostalgic and fresh. The Grilled Banana Split isn’t just a dessert—it’s a celebration of summer flavors that transforms a childhood favorite into a grown-up delight.

Recipe Yield: 2 servings

INGREDIENTS

2 ripe bananas (firm, not overly soft)
2 tbsp unsalted butter, melted
1 tbsp brown sugar
½ tsp ground cinnamon
4 scoops vanilla ice cream (or your favorite flavor)
¼ cup warm chocolate sauce
¼ cup warm caramel sauce
¼ cup chopped toasted pecans (or walnuts)
Whipped cream, for topping
Maraschino cherries, for garnish

INSTRUCTIONS

1. Preheat and prepare:
Preheat grill to medium-high heat. Lightly oil the grates to prevent sticking.

2. Slice and coat:
Slice bananas in half lengthwise, leaving the peels on. Brush cut sides generously with melted butter, then sprinkle evenly with brown sugar and cinnamon.

3. Grill the bananas:
Place bananas cut-side down on the grill for 2–3 minutes until grill marks appear and sugar begins to caramelize. Flip and grill 1–2 minutes more in the peel.

4. Assemble the split:
Carefully remove bananas from the grill. Peel away skins and arrange halves in shallow bowls. Add 2 scoops of ice cream between the banana halves.

5. Top and serve:
Drizzle generously with warm chocolate and caramel sauce. Sprinkle with toasted pecans, top with whipped cream, and finish with a cherry. Serve immediately.

Helpful Tips to Perfect This Recipe

  • Pick the right bananas: Choose ripe but firm bananas so they hold their shape while grilling and don’t become mushy.
  • Enhance the flavor: Add a pinch of sea salt to the butter mixture for a richer caramelized taste.
  • Keep it warm: If making multiple servings, keep grilled bananas on the top rack of the grill while assembling to maintain heat.
