INGREDIENTS

1 ½ cups graham cracker crumbs
2 cups fresh ripe mango purée (about 3 large mangos)
½ cup granulated sugar
6 tbsp unsalted butter, melted
2 tbsp granulated sugar
2 tbsp cornstarch
2 tbsp fresh lime juice
1 tsp lime zest
1 tsp pure vanilla extract
1 cup heavy whipping cream
3 tbsp powdered sugar

INSTRUCTIONS

1. Prepare the crust:
Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until evenly combined. Press the mixture firmly into the bottom and sides of a 9-inch pie pan. Bake for 10 minutes, then let cool completely.

2. Cook the filling:
In a saucepan, whisk mango purée, sugar, cornstarch, lime juice, and zest. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles, about 5–7 minutes. Remove from heat and stir in vanilla extract. Let cool slightly.

3. Fill the crust:
Pour the mango filling into the cooled crust, spreading evenly. Refrigerate for at least 4 hours, or until fully set.

4. Whip the cream:
In a chilled bowl, whip heavy cream with powdered sugar until soft peaks form.

5. Garnish and serve:
Spread or pipe whipped cream over chilled pie. Garnish with thin slices of fresh mango and extra lime zest before serving.
