Recipe Yield: 6 servings

INGREDIENTS

1 box (3 oz) strawberry Jello
1 box (3 oz) lime Jello
1 cup fresh strawberries, sliced
1 cup fresh kiwi, sliced
1 cup blueberries
1 cup pineapple chunks
1 cup vanilla Greek yogurt
1 cup heavy cream, whipped
1 tablespoon honey
2 cups boiling water, divided
2 cups cold water, divided

INSTRUCTIONS

1. Prepare strawberry layer:
In a medium bowl, dissolve strawberry Jello in 1 cup boiling water. Stir in 1 cup cold water. Pour into clear glasses, filling ⅓ of the way. Chill until set, about 2 hours.

2. Prepare lime layer:
Allow to cool slightly. Pour gently over strawberry layer. Chill again until set, about 2 hours. Optionally, press a few fresh fruit slices or blueberries directly into the Jello before it fully sets for added flavor and texture.

3. Make creamy layer:
In a small bowl, whisk Greek yogurt, whipped cream, and honey until smooth and fluffy.

4. Assemble parfait:
Once Jello layers are set, spoon creamy yogurt mixture on top. Smooth lightly with the back of a spoon.

5. Add fruit topping:
Arrange strawberries, kiwi, blueberries, and pineapple chunks over the creamy layer for a colorful finish.

6. Chill and serve:
Refrigerate for 30 minutes before serving to allow flavors to meld.
