INGREDIENTS

8 large eggs
1 cup cottage cheese (whole milk)
½ cup shredded cheddar cheese
¼ cup grated parmesan cheese
½ cup finely diced red bell pepper
½ cup chopped spinach
¼ cup cooked bacon crumbles
¼ cup whole milk
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with nonstick spray or line with silicone muffin liners.

2. Blend base mixture:
In a blender, combine eggs, cottage cheese, cheddar, parmesan, milk, salt, pepper, and garlic powder. Blend until completely smooth and custard-like.

3. Add fillings:
Divide the diced red bell pepper, spinach, and bacon evenly into the muffin cups. Pour the egg mixture over the top, filling each cup about ¾ full.

4. Bake to perfection:
Place the muffin tin in the oven and bake for 22–25 minutes, or until the egg bites are set in the center and lightly golden on the edges.

5. Cool and serve:
Let the egg bites cool for 5 minutes before carefully removing them. Serve warm, or cool completely and refrigerate in an airtight container for up to 4 days.
