INGREDIENTS

12 English muffins, split and lightly toasted
12 large eggs
1 cup whole milk
1 tsp kosher salt
½ tsp black pepper
1 cup shredded cheddar cheese
12 slices cooked bacon or breakfast sausage patties
12 slices American cheese
Butter or olive oil spray, for greasing

INSTRUCTIONS

1. Prepare the pan:
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or spray.

2. Make the eggs:
In a large bowl, whisk eggs, milk, salt, and pepper until smooth. Pour into the prepared baking dish and bake for 22–25 minutes, until set in the center. Let cool slightly, then cut into 12 even squares.

3. Assemble the sandwiches:
Place the bottom half of each English muffin on a work surface. Layer with one egg square, one slice of cheddar cheese, one slice of bacon or sausage patty, and one slice of American cheese. Top with the muffin lid.

4. Wrap and store:

5. Reheat and enjoy:
