INGREDIENTS

8 slices white sandwich bread
8 oz fresh mozzarella cheese, sliced into 8 even pieces
2 large eggs
3 tbsp milk
½ cup all-purpose flour
1 cup seasoned breadcrumbs
½ tsp garlic powder
½ tsp dried oregano
¼ tsp salt
⅛ tsp black pepper
Vegetable oil, for frying
2 tbsp fresh basil, finely chopped (optional, for garnish)

INSTRUCTIONS

1. Prepare the mozzarella: Pat the mozzarella slices dry with a paper towel to remove excess moisture. This helps prevent soggy sandwiches.

2. Assemble the sandwiches: Lay out the bread slices. Place one slice of mozzarella in the center of four bread slices. Top each with another slice of bread, pressing the edges together gently.

3. Trim and seal: For a cleaner presentation, trim the crusts if desired. Press the edges firmly to help the bread stick together. You can use the back of a spoon to seal.

4. Prepare the coating: In a shallow dish, whisk the eggs and milk. In a second dish, add the flour. In a third, combine the breadcrumbs, garlic powder, oregano, salt, and pepper.

5. Coat the sandwiches: Lightly dredge each sandwich in flour, then dip into the egg mixture, and finally press into the breadcrumbs until fully coated. Ensure the edges are well covered to keep the cheese inside.

6. Fry to golden perfection: Heat ½ inch of oil in a large skillet over medium heat. Once hot, fry sandwiches for 2–3 minutes per side, until golden and crisp. Work in batches if needed.
