INGREDIENTS

4 boneless, skinless chicken breasts (about 6 oz each)
½ cup grated parmesan cheese
½ cup panko breadcrumbs
1 tsp garlic powder
1 tsp dried Italian seasoning
½ tsp salt
½ tsp black pepper
2 large eggs
1 cup marinara sauce (no-oil, smooth style)
1 cup shredded mozzarella cheese
2 tbsp freshly chopped parsley (optional, for garnish)

INSTRUCTIONS

1. Prep the chicken:
Pound the chicken breasts to an even thickness, about ½ inch, for even cooking. Pat them dry with paper towels.

2. Prepare coating:
In one shallow bowl, whisk the eggs. In another bowl, mix parmesan, panko, garlic powder, Italian seasoning, salt, and black pepper.

3. Coat the chicken:
Dip each chicken breast into the egg mixture, letting excess drip off, then press into the breadcrumb-parmesan mixture until fully coated.

4. Air fry chicken:
Preheat the air fryer to 380°F (193°C). Place coated chicken breasts in the basket in a single layer. Cook for 9–10 minutes, then flip and cook another 7–8 minutes, until golden brown and the internal temperature reaches 165°F (74°C).

5. Add sauce and cheese:
Spoon marinara over each chicken breast, then sprinkle with mozzarella. Return to the air fryer and cook at 350°F (177°C) for 2–3 minutes, until the cheese is melted and bubbly.

6. Garnish and serve:
Remove carefully, sprinkle with parsley if desired, and serve immediately with pasta, salad, or steamed vegetables.
