Recipe Yield: 4 servings

INGREDIENTS

3 cups diced seedless watermelon (chilled)
1 1/2 tbsp fresh lime juice
1 1/2 tbsp honey (or agave syrup)

INSTRUCTIONS

1. Blend the base:
Add the chilled watermelon, lime juice, and honey to a high-speed blender or food processor. Blend on high until completely smooth.

2. Freeze into flakes:
Pour the mixture into a shallow metal or glass pan. Freeze for 2–3 hours, scraping with a fork every 30 minutes to create fluffy, granita-style “snow.”

3. Serve in cups:
Spoon the watermelon snow into small dessert cups or paper cones. Serve immediately with mini spoons or garnish with a tiny wedge of lime or a mint leaf.

HELPFUL TIPS TO PERFECT THIS RECIPE

  • Use Ultra-Chilled Watermelon: The colder your melon, the faster the freezing time—and the fluffier the texture.
  • Scrape Often for Fluff: Fluff every 30 minutes during freezing to avoid a hard block. A fork is your best tool!
  • Customize for Flavor: Add a few fresh mint leaves or a splash of coconut water for a tropical twist.
