Crisp & Fluffy Belgian Waffles – golden, airy, and topped with berries, cream, and syrup for the perfect brunch.

Crisp & Fluffy Belgian Waffles are the ultimate breakfast indulgence, perfect for cozy mornings or elegant weekend brunches. With their golden edges and airy, cloud-like centers, these waffles deliver everything you crave in a classic Belgian recipe. They’re made with buttermilk and whipped egg whites, creating the perfect balance of crispness and fluffiness that sets them apart from ordinary waffles.

Although waffles originated in Europe, Belgian waffles gained worldwide fame at the 1964 World’s Fair in New York, where they were first introduced to an American audience. Since then, they’ve become a beloved staple for both simple family breakfasts and decadent brunch spreads.

Whether you top them with syrup, berries, or a dollop of whipped cream, these waffles always feel special. They’re surprisingly easy to make, yet they bring that restaurant-quality touch right into your own kitchen. If you’re looking for a breakfast recipe that feels both classic and indulgent, Crisp & Fluffy Belgian Waffles are exactly what you need.

Recipe Yield: 6 servings

INGREDIENTS

2 cups all-purpose flour
2 tbsp granulated sugar
2 tsp baking powder
1 tsp baking soda
½ tsp fine sea salt
2 large eggs, separated
1 ¾ cups buttermilk
½ cup unsalted butter, melted and cooled
1 tsp pure vanilla extract

INSTRUCTIONS

1. Preheat and prepare:
Preheat your Belgian waffle iron. Lightly grease it with a small amount of butter or nonstick spray.

2. Mix dry ingredients:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until evenly combined.

3. Whisk wet ingredients:
In another bowl, whisk the egg yolks with buttermilk, melted butter, and vanilla until smooth.

4. Beat egg whites:
In a clean mixing bowl, beat egg whites with an electric mixer until soft peaks form. This step creates fluffy, airy waffles.

5. Combine batter:
Stir the wet ingredients into the dry mixture until just combined. Gently fold in the beaten egg whites, keeping the batter light.

6. Cook waffles:
Pour batter into the preheated waffle iron, spreading to the edges. Close and cook until golden brown and crisp, about 4–5 minutes.

7. Serve warm:
Transfer waffles to a wire rack (to keep them crisp) and serve immediately with toppings like maple syrup, whipped cream, or fresh berries.

Helpful Tips to Perfect This Recipe

  • Whip the egg whites fully: Be sure to beat them until soft peaks form. Folding them in gently is the secret to tall, airy Belgian waffles.
  • Don’t overmix the batter: Once the wet and dry ingredients are combined, stop mixing. Overmixing can create dense, chewy waffles.
  • Keep them warm and crisp: Place finished waffles in a 200°F oven on a wire rack to stay crisp until serving.
