INGREDIENTS

For the Biscuits
2 cups all-purpose flour
6 tbsp cold unsalted butter, cubed
1 cup cold buttermilk
1 tbsp baking powder
1 tsp baking soda
1 tsp sugar
1 tsp salt

For the Sausage Gravy
1 lb breakfast sausage
3 tbsp unsalted butter
1/4 cup all-purpose flour
3 cup whole milk, warmed
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp freshly cracked black pepper
1/2 tsp salt (or more to taste)
1/4 tsp crushed red pepper flakes (optional)

INSTRUCTIONS

1. Preheat oven:
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. Mix dry ingredients:
In a large bowl whisk flour, baking powder, baking soda, sugar, and salt.

3. Cut in butter:
Add cold butter cubes and cut into the flour with a pastry cutter or your fingers until mixture resembles coarse crumbs.

4. Add buttermilk:
Pour in cold buttermilk and stir gently until dough comes together. Do not overmix.

5. Shape and bake:
Turn dough onto a lightly floured surface. Pat into a 1-inch thick rectangle and fold once. Cut out biscuits with a round cutter and place on baking sheet. Bake for 12–14 minutes until golden.

6. Cook sausage:
In a large skillet over medium heat, cook sausage until browned and fully cooked, about 8 minutes. Remove with a slotted spoon and set aside. Leave about 2 tbsp of drippings in the pan.

7. Make gravy base:
Add butter to skillet with drippings. Stir in flour and cook 1–2 minutes until golden and nutty.

8. Add milk and seasonings:
Slowly whisk in warm milk until smooth. Add garlic powder, onion powder, pepper, and salt. Simmer for 5–6 minutes until thickened.

9. Combine with sausage:
Stir sausage back into gravy. Taste and adjust seasonings.

10. Serve:
Split warm biscuits in half and spoon hearty sausage gravy over the top. Serve immediately.
