Recipe Yield: 4 servings

INGREDIENTS

10 oz fresh spinach leaves, rinsed and dried
3 cloves garlic, thinly sliced
2 tbsp olive oil
1/4 tsp red pepper flakes
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
1 tbsp lemon juice

INSTRUCTIONS

1. Heat the pan:
Place a large skillet over medium heat and add olive oil. Allow it to warm until shimmering.

2. Sauté garlic:
Add sliced garlic and cook for about 1 minute, stirring often, until fragrant but not browned.

3. Add spinach:
Gradually add spinach to the skillet. Toss continuously with tongs as it begins to wilt. Continue until all spinach is in the pan.

4. Season and finish:
Sprinkle in red pepper flakes, sea salt, and black pepper. Cook for 2–3 minutes, just until spinach is tender but still vibrant green.

5. Brighten with lemon:
Remove from heat, drizzle with lemon juice, and toss well before serving warm.

Helpful Tips to Perfect This Recipe

  • Dry the Spinach Well: Excess water causes steaming instead of sautéing, so pat leaves dry for the best flavor and texture.
  • Use a Wide Skillet: A larger surface area helps the spinach cook quickly and evenly, preventing sogginess.
  • Finish with Flavor: A touch of lemon juice or even a sprinkle of Parmesan enhances the earthy greens beautifully.
