INGREDIENTS

4 lb whole chicken, patted dry
1 lemon, halved
4 garlic cloves, smashed
2 tbsp olive oil
2 tsp kosher salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp dried thyme
Fresh herbs (thyme or rosemary sprigs), optional

INSTRUCTIONS

1. Preheat the air fryer:
Preheat air fryer to 360°F (182°C) for 5 minutes to ensure even cooking.

2. Prepare the chicken:
Rub olive oil all over the chicken. Generously season with salt, pepper, garlic powder, onion powder, smoked paprika, and dried thyme, making sure to coat the cavity as well.

3. Stuff the cavity:
Place lemon halves, smashed garlic cloves, and fresh herbs inside the cavity for aromatic flavor.

4. Truss and place:
Tie the legs together with kitchen twine. Place the chicken breast side down in the air fryer basket.

5. Roast the chicken:
Cook for 30 minutes. Carefully flip the chicken breast side up, then continue cooking for another 25–30 minutes, or until a thermometer inserted into the thickest part of the thigh reads 165°F (74°C).

6. Rest and serve:
Remove the chicken from the air fryer and let it rest for 10 minutes before carving. This locks in juices for a tender, flavorful result.
