INGREDIENTS

8 oz spaghetti or lo mein noodles
1/3 cup creamy peanut butter
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp toasted sesame oil
1 tbsp honey
2 garlic cloves, minced
1 tsp fresh ginger, grated
1 cup shredded carrots
1 red bell pepper, thinly sliced
4 green onions, sliced
2 tbsp toasted sesame seeds
1/4 cup chopped fresh cilantro
1/3 cup warm water (as needed)
1/2 tsp crushed red pepper flakes (optional)

INSTRUCTIONS

1. Cook the noodles:
Bring a large pot of salted water to a boil. Cook noodles according to package directions until al dente. Drain, rinse under cold water, and set aside.

2. Make the peanut sauce:
In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes. Gradually whisk in warm water until the sauce is smooth and pourable.

3. Combine noodles and sauce:
Place cooled noodles in a large mixing bowl. Pour sauce over the noodles and toss until evenly coated.

4. Add vegetables:
Gently fold in shredded carrots, bell pepper slices, and half of the green onions.

5. Garnish and serve:
Transfer to a serving platter or bowls. Sprinkle with remaining green onions, sesame seeds, and cilantro. Serve at room temperature or slightly chilled.
