1 ½ cups salsa
1 cup diced onion
1 cup diced red bell pepper
1 tbsp taco seasoning
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
½ cup sour cream
1 tbsp olive oil
8 medium flour tortillas
¼ cup chopped fresh cilantro (optional for garnish)

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Cook the filling:
In a large skillet, heat olive oil over medium heat. Add ground beef, onion, and red bell pepper. Cook until beef is browned and vegetables are softened, about 6–7 minutes.

3. Season and combine:
Stir in black beans, corn, salsa, and taco seasoning. Simmer for 3–4 minutes to blend flavors, stirring occasionally.

4. Layer the casserole:
