Recipe Yield: 8 servings

INGREDIENTS

12 lasagna noodles, cooked al dente
1 lb Italian sausage, casings removed
1½ cups sliced pepperoni
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup shredded provolone cheese
½ cup grated parmesan cheese
1 medium onion, diced
4 cloves garlic, minced
4 cups marinara sauce
1 large egg
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
½ tsp crushed red pepper flakes (optional)
2 tbsp fresh parsley, chopped

INSTRUCTIONS

1. Cook the noodles:
Bring a large pot of salted water to a boil. Cook lasagna noodles until al dente, then drain and set aside on parchment paper to prevent sticking.

2. Prepare the filling:
In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook, breaking it apart, until browned. Stir in onion and garlic; sauté 3 minutes until softened.

3. Add pizza flavors:
Mix in marinara sauce, oregano, basil, and crushed red pepper. Simmer for 5 minutes, then remove from heat and stir in ½ cup of the pepperoni slices.

4. Make ricotta layer:
In a bowl, combine ricotta cheese, egg, and half the parmesan cheese. Stir until smooth.

5. Assemble the lasagna:
Spread 1 cup of meat sauce in the bottom of a 9×13-inch baking dish. Layer with noodles, ricotta mixture, meat sauce, mozzarella, provolone, and ½ cup pepperoni. Repeat layers, finishing with sauce, cheeses, and the remaining ½ cup pepperoni on top for that classic pizza look.

6. Bake to perfection:
Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake an additional 15 minutes until golden and bubbling.

7. Rest and serve:
Let lasagna rest 10 minutes before slicing. Garnish with fresh parsley and serve hot.
