INGREDIENTS

1 pkg (8 count) large butter croissants, day-old preferred
½ cup sliced almonds
2 tbsp granulated sugar
1 cup whole milk
1 cup almond flour
1 cup powdered sugar
8 tbsp unsalted butter, softened
2 large eggs, room temperature
1 tsp almond extract
1 tbsp all-purpose flour
¼ tsp fine sea salt
2 tbsp dark rum (optional)
1 tsp vanilla extract

INSTRUCTIONS

1. Prepare almond filling:
In a mixing bowl, cream butter and powdered sugar until light and fluffy. Beat in eggs, one at a time, followed by almond extract. Mix in almond flour, all-purpose flour, and salt until smooth.

2. Make soaking syrup:
In a small saucepan over medium heat, warm milk, granulated sugar, vanilla, and rum (if using) until sugar dissolves. Remove from heat and cool slightly.

3. Slice and soak:
Slice each croissant horizontally, leaving one side hinged. Lightly brush the inside and outside with the syrup to keep them moist.

4. Fill croissants:
Spread a generous layer of almond filling inside each croissant. Close gently, then spread a thin layer of filling over the top.

5. Add almonds:
Sprinkle sliced almonds over the tops, pressing gently so they stick.

6. Bake:
