Recipe Yield: about 6 chocolate bars (depending on mold size)

INGREDIENTS

10 oz milk chocolate, chopped
2 oz dark chocolate, chopped
1 cup pistachios (shelled, unsalted)
3 tbsp powdered sugar
2 tbsp heavy cream
1 tbsp unsalted butter, softened
1 tsp rose water or orange blossom water (optional, for Middle Eastern flair)
2 tbsp finely chopped pistachios (for dusting garnish)

INSTRUCTIONS

1. Prepare pistachio filling:
In a food processor, blend pistachios until finely ground. Add powdered sugar, heavy cream, butter, and rose water (if using). Process until you get a creamy, slightly textured pistachio paste. Chill for 20 minutes to firm.

2. Melt chocolate:
Combine the chopped milk chocolate and dark chocolate in a heatproof bowl. Melt over a double boiler or microwave in 30-second intervals, stirring until glossy and smooth.

3. Mold the shells:
Spoon a little melted chocolate into silicone bar molds. Tilt and swirl to coat sides. Chill for 5 minutes, then repeat with another thin layer to make sturdy shells.

4. Add pistachio filling:
Spoon the pistachio mixture into each shell, leaving a little space on top for sealing. Press down lightly to keep filling compact and even.

5. Seal and finish:
Pour remaining melted chocolate over the filling to close. Tap molds gently to remove air bubbles. Sprinkle chopped pistachios on top for a textured, homemade finish.

6. Chill and serve:
Refrigerate for 30 minutes until set. Pop out of molds and store in an airtight container. Serve at room temperature for best flavor.
