INGREDIENTS

1 lb Italian sausage links, sliced into ½-inch rounds
4 cups green cabbage, chopped
3 medium carrots, sliced
2 celery stalks, sliced
1 can (14.5 oz) diced tomatoes
1 large yellow onion, chopped
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 tbsp olive oil
1 tsp dried oregano
½ tsp dried thyme
½ tsp smoked paprika
½ tsp crushed red pepper flakes (optional)
Salt and freshly ground black pepper, to taste
2 tbsp fresh parsley, chopped

INSTRUCTIONS

1. Brown the sausage:
In a large heavy pot or Dutch oven, heat olive oil over medium heat. Add sliced sausage and cook for 5–6 minutes, until browned. Transfer sausage to a plate and set aside.

2. Sauté the vegetables:
In the same pot, add onion, garlic, carrots, and celery. Cook for 4–5 minutes, stirring often, until vegetables begin to soften.

3. Add cabbage and seasonings:
Stir in chopped cabbage, oregano, thyme, smoked paprika, and crushed red pepper flakes. Cook for 3–4 minutes until cabbage starts to wilt.

4. Simmer the stew:
Return sausage to the pot. Add diced tomatoes (with juice) and chicken broth. Stir well, bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, until vegetables are tender and flavors are blended.

5. Season and serve:
Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
