INGREDIENTS

2 lb russet potatoes, peeled and cut into chunks
1 cup sharp white cheddar cheese, shredded
½ cup Irish cheddar cheese, shredded
3 green onions, thinly sliced
4 strips thick-cut bacon, cooked and crumbled
4 tbsp unsalted butter, softened
1 cup heavy cream, warmed
½ cup sour cream
1 tbsp fresh parsley, chopped
1 tsp sea salt
½ tsp black pepper
¼ tsp garlic powder

INSTRUCTIONS

1. Boil the potatoes:
Place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for 15–18 minutes, until fork tender.

2. Mash and mix:
Drain the potatoes and return them to the pot. Add butter, warmed cream, sour cream, salt, pepper, and garlic powder. Mash until smooth and creamy.

3. Fold in flavor:
Stir in half of the shredded white cheddar, half of the Irish cheddar, green onions, and half of the bacon. Mix gently to combine.

4. Bake the casserole:
Preheat oven to 375°F (190°C). Transfer potato mixture into a buttered 9×13-inch baking dish. Sprinkle remaining cheeses evenly over the top.

5. Finish and serve:
Bake for 20–25 minutes, until golden and bubbly. Remove from oven, sprinkle with remaining bacon and fresh parsley. Serve warm.
