1/2 cup all-purpose flour
1 tbsp unsalted butter, for greasing
2 cups fresh sweet cherries, pitted
3 large eggs
1/2 cup granulated sugar
1 cup whole milk
1/2 cup heavy cream
1 tsp pure vanilla extract
1/2 tsp almond extract
1/4 tsp fine sea salt
2 tbsp powdered sugar, for dusting

INSTRUCTIONS

1. Prepare the dish:
Preheat the oven to 350°F (175°C). Generously butter a 9-inch round baking dish or deep pie pan.

2. Arrange cherries:
Spread the pitted cherries evenly across the bottom of the prepared dish.

3. Make the batter:
In a large mixing bowl, whisk the eggs and sugar until pale and slightly frothy. Add the milk, heavy cream, vanilla extract, almond extract, and salt, whisking until smooth.

4. Add the flour:
Gradually whisk in the flour until no lumps remain. The batter should be silky and pourable.

5. Combine and bake:
Pour the batter over the cherries. Bake for 35–40 minutes, or until the clafoutis is puffed, golden, and set in the center (a knife inserted should come out clean).

6. Cool and serve:
Let cool for 10 minutes, then lightly dust with powdered sugar before serving warm or at room temperature.
