INGREDIENTS

1 sheet puff pastry, thawed
1 bunch asparagus, trimmed
½ cup goat cheese, softened
¼ cup ricotta cheese
2 tbsp grated parmesan cheese
1 tbsp olive oil
1 tbsp unsalted butter, melted
1 garlic clove, minced
1 large egg
2 tbsp heavy cream
½ tsp lemon zest
½ tsp salt
¼ tsp black pepper
1 tbsp fresh chives, finely chopped

INSTRUCTIONS

1. Preheat and prepare:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place puff pastry sheet onto the baking sheet and gently score a 1-inch border around the edges without cutting all the way through.

2. Make the filling:
In a bowl, mix goat cheese, ricotta, egg, cream, lemon zest, salt, and pepper until smooth. Spread mixture evenly inside the scored border of the puff pastry.

3. Arrange asparagus:
Toss trimmed asparagus with olive oil, melted butter, and minced garlic. Lay spears neatly across the cheese filling, alternating direction for a rustic look. Sprinkle with parmesan.

4. Bake the tart:
Bake for 22–25 minutes until the pastry is golden and puffed and asparagus is tender.

5. Garnish and serve:
Remove from oven, sprinkle with fresh chives, and let rest for 5 minutes before slicing. Serve warm or at room temperature.
