This recipe takes tender, flaky salmon fillets and coats them in a marinade of miso paste, honey, soy sauce, and turmeric, which caramelizes into a glossy, flavorful crust in the oven.

Recipe Yield: 4 servings

INGREDIENTS

4 salmon fillets (6 oz each, skin on)
3 tbsp white miso paste
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
2 tbsp olive oil
1 tsp ground turmeric
1 tsp fresh grated ginger
2 garlic cloves, minced
½ tsp black pepper
1 tbsp sesame seeds (for garnish)
2 green onions, thinly sliced (for garnish)
Lemon wedges, for serving

INSTRUCTIONS

1. Prepare the marinade:
In a small bowl, whisk together miso paste, honey, soy sauce, rice vinegar, olive oil, turmeric, ginger, garlic, and black pepper until smooth.

2. Marinate the salmon:
Place salmon fillets in a shallow dish or resealable bag. Pour marinade over salmon, coating evenly. Cover and refrigerate for 30 minutes (or up to 2 hours).

3. Preheat and arrange:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange salmon fillets skin side down, brushing with extra marinade.

4. Roast the salmon:
Bake salmon for 12–15 minutes, depending on thickness, until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C). For a golden finish, broil on high for 1–2 minutes at the end.

5. Garnish and serve:
Remove from oven, sprinkle with sesame seeds and green onions, and serve with fresh lemon wedges.
