8 small corn tortillas, warmed
1 lb pork shoulder, thinly sliced
1 cup fresh tomato salsa (see below)
½ cup crumbled queso fresco
½ cup thinly sliced red onion

Tomato Salsa:
2 cups ripe tomatoes, finely diced
1 small jalapeño, seeded and minced
2 tbsp red onion, finely minced
2 tbsp fresh lime juice
1 tbsp olive oil
½ tsp sea salt
2 tbsp chopped fresh cilantro

INSTRUCTIONS

1. Make the salsa:
In a medium bowl, combine tomatoes, jalapeño, red onion, lime juice, olive oil, salt, and cilantro. Stir well, then chill while preparing pork.

2. Season the pork:
In a large bowl, toss sliced pork with olive oil, smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper until evenly coated.

3. Cook the pork:
Heat a large skillet over medium-high heat. Add pork in a single layer and cook for 6–8 minutes, stirring occasionally, until caramelized and fully cooked.

4. Warm the tortillas:
Quickly warm tortillas in a dry skillet or over an open flame until lightly charred and pliable.

5. Assemble the tacos:
Fill each tortilla with pork, a generous spoonful of tomato salsa, red onion, queso fresco, and cilantro. Serve with lime wedges.
