Recipe Yield: 12–14 rolls

INGREDIENTS

3 ½ cups all-purpose flour
2 ¼ tsp active dry yeast
1 cup warm whole milk (110°F)
¼ cup unsalted butter, melted
¼ cup honey
1 large egg
1 tsp fine sea salt
Flaky sea salt, for topping
2 tbsp honey (for glaze)
1 tbsp unsalted butter, melted (for glaze)

INSTRUCTIONS

1. Activate yeast:
In a small bowl, whisk warm milk, yeast, and 1 tablespoon of honey. Let sit 5–8 minutes until foamy.

2. Make dough:
In a large mixing bowl, combine flour and salt. Add yeast mixture, melted butter, remaining honey, and egg. Mix until shaggy dough forms.

3. Knead dough:
Transfer to a floured surface and knead 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 6–7 minutes.

4. First rise:
Place dough in a lightly greased bowl, cover, and let rise in a warm spot until doubled, about 1–1 ½ hours.

5. Shape rolls:
Punch down dough, divide into 12–14 equal pieces, and shape into smooth balls. Arrange in a greased 9×13-inch baking dish.

6. Second rise:
Cover and let rise until puffy, about 30–40 minutes. Meanwhile, preheat oven to 375°F (190°C).

7. Bake rolls:
Brush tops lightly with melted butter. Bake 18–22 minutes until golden brown and fluffy inside.

8. Honey butter glaze:
In a small bowl, whisk melted butter with honey. Immediately brush over hot rolls and sprinkle with flaky sea salt. Serve warm.
