INGREDIENTS

1 ½ lb pork tenderloin, cut into 1-inch cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 red onion, cut into wedges
3 tbsp olive oil
3 tbsp soy sauce
2 tbsp honey
1 tbsp Dijon mustard
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp dried oregano
½ tsp crushed red pepper flakes
1 tbsp fresh lemon juice
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)

INSTRUCTIONS

1. Prepare the marinade:
In a medium bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic, smoked paprika, oregano, red pepper flakes, and lemon juice until smooth.

2. Marinate the pork:
Place pork cubes in a large resealable bag or bowl. Pour marinade over pork, toss well, cover, and refrigerate for at least 1 hour (or up to 6 hours for deeper flavor).

3. Assemble the skewers:
Thread marinated pork cubes onto skewers, alternating with bell peppers and onion wedges. Season lightly with salt and black pepper.

4. Preheat the grill:
Heat grill to medium-high and lightly oil the grates.

5. Grill the skewers:
Place skewers on the grill and cook for 10–12 minutes, turning occasionally, until pork is cooked through and slightly charred at the edges.

6. Serve and garnish:
Transfer skewers to a platter, sprinkle with chopped parsley, and serve hot.
