Recipe Yield: 12–14 crepes

INGREDIENTS

1 ¾ cups Flour
1 ¼ cups Milk (hot)
one cup Water (hot)
2 large Eggs
1 tbsp Olive Oil
one tsp Baking Soda
1 tsp Honey
Pinch of Salt
2 tbsp Butter (for cooking)

INSTRUCTIONS

1. Blend the batter: In a large mixing bowl, whisk together eggs, honey, and olive oil until smooth. Next, gradually add hot milk and hot water, stirring constantly to ensure everything combines well. As you mix, slowly sift in flour, baking soda, and salt, whisking until the batter becomes silky and lump-free. Once everything is fully incorporated, let it rest for 10–15 minutes to fully hydrate, which will help create the perfect texture and consistency.

2. Heat the pan: Place a nonstick skillet or crepe pan over medium heat. Once the pan is warm, add a little butter at a time, brushing it with a silicone brush or swirling to coat evenly. Add more as needed per each crepe to prevent sticking, enhance flavor, and create golden edges.

3. Cook the crepes: Pour about ¼ cup of batter into the center of the pan. Right away, swirl the pan to spread the batter thinly and evenly. Cook for about 30–45 seconds, or until the edges lift slightly. Then, carefully flip and cook for another 15–20 seconds until golden. As you continue, repeat the process, adding more butter as needed between batches to maintain a smooth cooking process. If necessary, adjust the heat slightly to prevent over-browning.
